Baked Herb-Crusted Salmon

Ingredients:

  •      2 Alaskan King Salmon portions
  •      2 tbsp olive oil
  •      1 tbsp Dijon mustard
  •      1/3 cup breadcrumbs
  •      2 tbsp chopped parsley
  •      1 tbsp grated Parmesan cheese
  •      Zest of 1 lemon

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. Place the salmon fillets skin-side down on a lined baking tray.
  3. Brush each fillet with olive oil and Dijon mustard.
  4. In a small bowl, mix breadcrumbs, parsley, Parmesan, and lemon zest. Sprinkle the mixture evenly over the fillets.
  5. Bake for 12-15 minutes or until the salmon flakes easily. Serve with your favourite side dishes and enjoy!
