Ingredients:
- 2 Alaskan King Salmon portions
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 1/3 cup breadcrumbs
- 2 tbsp chopped parsley
- 1 tbsp grated Parmesan cheese
- Zest of 1 lemon
- Preheat your oven to 200°C (400°F).
- Place the salmon fillets skin-side down on a lined baking tray.
- Brush each fillet with olive oil and Dijon mustard.
- In a small bowl, mix breadcrumbs, parsley, Parmesan, and lemon zest. Sprinkle the mixture evenly over the fillets.
- Bake for 12-15 minutes or until the salmon flakes easily. Serve with your favourite side dishes and enjoy!
