Hong Kong Stir-fried Red Sea Cucumber with Celery

INGREDIENTS

  • 400g red sea cucumber (soaked in water)
  • Sea salt
  • 3 cloves of garlic, peeled and finely chopped
  • 1 tablespoon oyster sauce
  • 1 teaspoon light soya sauce
  • A pinch of Chinese cooking wine (“Hua Diao”)
  • 2 stalks of celery
  • 2 teaspoons of sunflower oil or sesame oil

 

INSTRUCTIONS

  1. Thoroughly rinse the leeks and pat dry with a paper towel.
  2. Slice the leeks in a slant fashion consistently.
  3. Heat oil in a pan and saute the garlic until fragrant or slightly browned.
  4. Add in the leeks and stir-fry briefly.
  5. Add in the light soya sauce, oyster sauce and Chinese cooking wine together with a pinch of salt. Mix well.
  6. Taste the sauce mixture and adjust the seasoning as preferred.
  7. Add in the sea cucumber and continue to stir-fry until everything is covered in the seasoning.
  8. Serve immediately.
